I made this Green Goddess Dressing Recipe for the most recent Salad on Sunday’s recipe and it’s extremely delicious. Both are extremely easy to whip up. We are still in the midst of dealing with COVID-19 lock downs, so I am feeling pretty passionate about sharing easy recipes. Especially ones that allow you to use up ingredients you may already have in the refrigerator and need to get rid of. Both this dressing and salad are a great option for that.

What is Green Goddess Dressing

This type of dressing originated out of California and is a beautiful mix of herbs, lemon, garlic and something that makes it creamy. Traditionally, mayo is what gives the green goddess dressing it’s creamy texture. However, I am trying to keep things as healthy as possible around here, so I used cashews to create a creamy consistency. Tip – soaking the cashews before adding them to the dressing makes it much easier to blend.

The herbs are what give this salad dressing recipe it’s gorgeous green color. Here we use a mix of fresh basil, chives and tarragon. The freshness of the herbs with the citrus from the lemon and it’s bright color make this the perfect summer time addition to salads and roasted veggies.

A Versatile Dressing Recipe

Other than salad, there are so many other ways to enjoy this dressing. Use it at a dipping sauce for a summer vegetable tray. Spread it on toasted french bread and top with micro greens. It’s absolutely delicious to dip roasted vegetables in as well. This dressing recipe will keep for about a week in the refrigerator so it’s great to add to snacks or weekday meals.

Ingredients for Our Green Goddess Dressing

Our version of green goddess dressing has a couple tweaks from the classic recipe. Typically there is fresh parsley in the dressing – we omitted that ingredient, but would be an delicious addition. To give it some tang, we added a splash of champagne vinegar, which is very light and tastes sweet. To add to the sweetness from the vinegar, we also added a tablespoon of raw honey – keeping things clean and healthy.

Green Goddess Dressing

A sweet, tangy salad dressing packed with fresh herbs, garlic and lemon and a flavor that will dress up any summer salad or simple roasted vegetables. Easy to make with little mess.

Ingredients

Units
  • 1/2 cup unsalted cashews, soaked
  • 1/3 cup fresh basil leaves
  • 1/3 cup fresh chives
  • 1/4 cup fresh tarragon
  • 1 garlic clove
  • 2 tsp capers
  • Juice of one lemon (about 3 tablespoons)
  • 1 tbs raw honey
  • 1/2 tbs champagne vinegar
  • 1 tbs coconut oil, or your favorite olive oil
  • 1 heavy pinch of salt
  • 1 heavy pinch of pepper

Instructions

  1. Soak the cashews in water for at least 4 hours. This can also be done overnight.
  2. Add all of the ingredients into a blender or food processor.
  3. Blend until the dressing is completely smooth.
  4. Add more salt or pepper to taste.

Notes

This dressing can be stored in an air tight container for up to a week in the refrigerator. If you do not have champagne vinegar you can omit this ingredient altogether and the recipe will still work.
